Create Brunus Chocolate Bar
A collaboration between Chef Guido Braeken and master chocolatier Geert-Jan Heesterbeek. Brunus is a filled white chocolate bar with a flowing caramel finished with sudachi rice vinegar, and a gianduja of roasted almonds and Japanese puffed rice from Gunma.
Create Persum Chocolate Bar
Persum is a filled chocolate bar with a gelée of sakura, shiso vinegar and Thai basil, and a chocolate ganache of cherry and verveine.
